Boil the citrus slices in water for 2 minutes
Drain and cool the citrus slices to room temperature
Make a simple syrup with 2 parts white sugar and 1 part water
Simmer the citrus slices in the simple syrup for 30 minutes until translucent
Dry the candied citrus slices for 12 hours or in a food dehydrator at 95°F for 2 hours
Lightly coat the dried citrus slices with more white sugar
Melt chocolate melting wafers in a double boiler
Dip half of each candied citrus slice in the melted chocolate
Transfer the chocolate-dipped slices to parchment paper and allow to cool completely
Sprinkle the chocolate-dipped slices with flaky sea salt
