Candied Citrus Slices
  1. Boil the citrus slices in water for 2 minutes

  2. Drain and cool the citrus slices to room temperature

  3. Make a simple syrup with 2 parts white sugar and 1 part water

  4. Simmer the citrus slices in the simple syrup for 30 minutes until translucent

  5. Dry the candied citrus slices for 12 hours or in a food dehydrator at 95°F for 2 hours

  6. Lightly coat the dried citrus slices with more white sugar

  7. Melt chocolate melting wafers in a double boiler

  8. Dip half of each candied citrus slice in the melted chocolate

  9. Transfer the chocolate-dipped slices to parchment paper and allow to cool completely

  10. Sprinkle the chocolate-dipped slices with flaky sea salt
