Remove the casings from the Italian sausages.
In a pot, add oil and the sausage. Make sure the pan is hot.
Add the diced shallot and minced garlic.
Break up the sausage with your hands.
Add the crushed tomatoes, chicken broth, and 2 cups of water.
Add the bay leaves and let it simmer for 15 minutes.
Add the half & half, cream cheese, and baby spinach.
Serve with Parmesan cheese.
