No Bake Pumpkin Cheesecake Balls
  1. Melt ½ cup of the white chocolate slowly until smooth.

  2. Combine wafer crumbs, pumpkin puree, cream cheese, powdered sugar, and pumpkin pie spice in a food processor.

  3. Add melted white chocolate to the mixture and blend for about 2–3 minutes until smooth.

  4. Taste the mixture and add more powdered sugar if desired.

  5. Transfer mixture to a bowl and refrigerate for at least 30 minutes.

  6. Line a cookie sheet with wax paper.

  7. Roll about one heaping spoonful of mixture into balls and place on tray.

  8. Melt the remaining white chocolate until smooth.

  9. Dip each ball into melted chocolate and place back on tray.

  10. Refrigerate until the chocolate coating hardens.
