Crunchy Peanut Butter Cookies
  1. Preheat the oven to 350°F.

  2. In a medium bowl, combine the peanut butter, sugar, vanilla, egg, and salt, and mix well. Drop the mixture by rounded spoonfuls onto an ungreased baking sheet, leaving about 1 inch of space between the cookies. Using the back of a fork, flatten the cookies, making a criss-cross hatch pattern with the fork tines.

  3. Bake in the preheated oven for about 10 minutes, until the edges of the cookies begin to turn golden brown. Transfer the cookies to a wire rack to cool. Serve at room temperature.
