Bake the rice at 400°F for 40 minutes, stirring every 10 minutes, until brown and crispy.
Marinate the salmon in the soy sauce, honey, sesame oil, onion powder, garlic powder, salt and pepper for at least 10 minutes, then air fry at 400°F for 10 minutes.
Blend the dressing ingredients together.
Toss the crispy rice, cucumbers, edamame, green onion, cilantro, and avocado with the dressing and plate. Sprinkle with peanuts, and top the salmon.
