  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

  2. Mash bananas in a large bowl until smooth.

  3. Stir in vanilla, maple syrup, and melted coconut oil.

  4. Add oats, nuts, coconut, cinnamon, apple pie spice, and salt. Mix until evenly coated.

  5. Spread mixture onto the prepared baking sheet in an even layer.

  6. Bake for 40–50 minutes, stirring every 15 minutes, until golden brown.

  7. For chunky clusters, press the granola down after the final stir and finish baking undisturbed.

  8. Cool completely.

  9. Stir in dried apples and store in an airtight container.
