Combine chicken with bouillon, lime juice, honey, cilantro, garlic, soy sauce, and seasonings. Marinate for at least 20 minutes. Reserve 1 tbsp of marinade for basting.
Cook chicken over medium heat until fully cooked through, brushing with reserved marinade as it cooks.
Toss all corn salad ingredients together in a bowl. Set aside.
Cook rice according to package instructions. Once done, stir in cilantro, lime juice, and salt.
Assemble bowls with ¾ cup cilantro lime rice, sliced chicken, and a serving of corn salad. Brush chicken with any extra sauce before serving.
