Pepito’s Beef Brisket
  1. Gather all ingredients.

  2. Score the brisket. Cut into sections that will fit in your pan.

  3. Season with salt and pepper.

  4. Brown over high heat with 1Tbsp of oil, using tongs to turn the meat to sear it all over. Remove from the pan and set aside.

  5. Add carrot, onion, and garlic to the pan, cook for a few minutes.

  6. Add in beef stock, Worcestershire sauce, and tomato paste. Stir it all in well. Let it deglaze the pan.

  7. Move the mixture to a pressure cooker. Add the brisket. Seal for 90 minutes cooking.

  8. Remove the beef and shred it with forks.

  9. Blend the gravy until smooth.

  10. Put the shredded meat back in and mix it up well.

  11. Serve over mashed potatoes.
