Preheat the oven to 375°F (190°C).
In a large baking dish, mix together the uncooked rice, chicken broth, chopped onion, minced garlic, sun-dried tomatoes, baby spinach, dried oregano, dried basil, salt, and pepper.
Place the chicken breasts on top of the rice mixture.
Sprinkle the grated Parmesan cheese over the chicken and rice.
Cover the baking dish with foil and bake for 35-40 minutes, or until the chicken is thoroughly cooked and the rice is tender.
Remove the foil and broil for an additional 5 minutes, until the cheese is golden and bubbly.
Garnish with fresh parsley before serving.
