Preheat oven to 200°C.
Grease and line a baking tray with baking paper.
To prepare the cauliflower, blanch the whole cauliflower first, then slice it into steaks.
Prepare the marinade by combining all the ingredients in a small bowl.
Brush the marinade onto the cauliflower steaks, sprinkle sumac over them, and add diced butter to the tray.
Bake in the oven for 25-30 minutes until crispy and cooked through.
Drizzle pomegranate molasses over the cauliflower steaks before serving.
Serve with tahini sauce or cumin yoghurt dip.
