Preheat oven to 190°C / 375°F (or air fryer to 180°C / 350°F)
In a bowl, mix cottage cheese, mozzarella, egg, spices, and almond flour (if using) until combined
Scoop tablespoon-sized portions and roll gently into balls
Arrange on a parchment-lined tray (or air fryer basket). Lightly brush with oil/butter if desired
Bake 12–15 minutes, flipping once, until golden and crisp (or air fryer: 8–10 minutes, shaking halfway)
Cool 2 minutes, then serve warm
