Turkish Crying Cake
  1. Start by pre-heating your oven to 180c. Also grease a 9 inch square cake tin or dish, leave this aside.

  2. In a large bowl, add the cocoa powder, coffee and the hot water. Whisk these together.

  3. Now add the oil, buttermilk and eggs. Whisk all this until combined.

  4. Add the flour and sugar, whisk just until you get a smooth batter.

  5. In a small separate bowl, add the baking soda and pour the vinegar over this. This will start bubbling, just give it a quick mix and then add it into your batter and whisk this in.

  6. Pour this batter into your prepared tin, then bake in your pre-heated oven for around 45 minutes, or until a toothpick inserted into the centre comes out clean.

  7. Whiles your cake is baking, make the milk mixture.

  8. Add all the ingredients for the milk mixture into a pot and give this a whisk.

  9. Place this onto medium heat, and heat whiles whisking until the mixture starts to simmer and the cocoa powder has dissolved.

  10. Leave this aside to cool down whiles the cake is baking.

  11. Once the cake has baked and is still warm, pour this milk over it. Don't pour it all at once, just add a bit, let this soak into the cake, then add more.

  12. Once all the milk has been added, leave the cake aside to soak and cool down completely.

  13. In a large bowl, add all the ingredients for the whipped cream. Whip just until you get soft peaks.

  14. Leave this in your fridge until you're ready to use it.

  15. In a bowl, add the chocolate and the cream. Place this in your microwave and heat it for 30 seconds.

  16. Take this out and give it a mix, then place it back into your microwave and heat for 15 seconds this time. Take this out and give it a mix again.

  17. Keep repeating this until the chocolate has all melted and you have a smooth ganache. Leave this aside.

  18. Once your cake has completely cooled down, we can start putting everything together.

  19. Add the whipped cream on top of the cake and spread this out. Now add the ganache on top and spread this out too.

  20. Place this into your fridge and leave to set up. I left my cake overnight, but 2 hours is good enough.

  21. Once set, cut into it, then you can enjoy!
