Kinda like a mixture between overnight oats, chia seed pudding, and peach pie. I’m in.
Overnight oats
Cobbler crumble
Heat the oven to 350°F.
Combine all the crumble ingredients and spread them on a small lined sheet pan. This is my favorite part of the meal so take care to not scorch them in the oven.
Bake for 10-14 minutes, stirring once, until toasted. Cool completely.
In four mason jars or small containers, evenly distribute the oats, chia seeds, milk, Greek yogurt, maple syrup, vanilla, cinnamon, salt, and stir.
Fold in approximately two-thirds of the diced peaches, or all of them. It really doesn’t matter that much. Divide among four jars and refrigerate overnight.
Top with any remaining peaches and crumble immediately before serving.
Instructions
Storage: The oats keep for 4 days refrigerated. Store the crumble separately at room temperature so it stays crisp. Add a splash of milk if they’re too dry for your taste.
