Pesto Chicken & Pearl Couscous Bake
  1. Preheat oven to 375°F.

  2. In a 9x13 baking dish, stir together the pearl couscous, chicken broth, pesto, and minced garlic.

  3. Add the diced chicken and cherry tomatoes.

  4. Season the chicken with Italian seasoning, salt, and pepper.

  5. Cover tightly with foil and bake for 40–45 minutes, or until the couscous is tender and the chicken is cooked through.

  6. Remove the foil, top with mozzarella pearls, and bake uncovered for 5–10 minutes until the cheese is melted.

  7. Let rest for 5 minutes before serving.

  8. Garnish with fresh basil and an extra drizzle of pesto, if desired.
