Cut chicken thighs into strips and marinate with egg white, salt, white pepper, soy sauce, sesame oil, and baking soda
Heat frying oil to medium heat (or use air fryer as alternative)
Coat marinated chicken in potato starch
Fry chicken for 6-8 minutes, then drain on paper towels
Fry chips for 6-8 minutes, then drain on paper towels
Mix salt, sugar, MSG, white pepper, chilli flakes, paprika, Chinese five spice, and onion powder to make seasoning
Return chicken and chips to fryer for a second fry for around 4 minutes
Transfer fried chicken and chips to a hot wok
Add sliced bell pepper, spring onion, chilli, white onion, and grated garlic to the wok
Add seasoning mixture and toss everything evenly
Add a few teaspoons of crispy chilli oil and mix well
Serve with takeaway sauce
