Add beef strips to a bowl with ginger, spring onions, soy, rice vinegar, cornflour and plenty of black pepper. Leave to marinate for 1-2 hours (or ideally overnight)
Add oil to a pan and sear the marinated beef, then add vegetables and the rest of the sauce mixture (stock, soy, honey and black pepper)
Stir well and simmer for 10 minutes on medium heat while preparing rice
Serve the beef with cooked rice
