Thai Red Curry Chicken & Rice Slow Cooker Meal Prep
  1. Add boneless skinless chicken thighs, Thai red curry paste, garlic paste, ginger paste, brown sugar, soy sauce, and light coconut milk to the slow cooker

  2. Mix all ingredients together

  3. Slow cook for a few hours until the chicken is fall apart tender and flavors have deepened

  4. Add Thai basil, cilantro, and juice and zest of 2-3 limes to the slow cooker

  5. Mix everything together

  6. Add steamed jasmine rice and mix to combine

  7. Portion into 6 equal servings

  8. Top with lime juice and serve
