Feta Fried Egg With Basil Pesto
  1. Warm some feta crumbles in a small frying pan until it begins to melt

  2. Drizzle the feta with some basil pesto

  3. Fry an egg directly on top of the feta to create a lacy, crispy, cheesy crust, covering to finish cooking the whites

  4. Warm a tortilla in a dry pan

  5. Smash a half of an avocado onto the tortilla and top with a squeeze of lemon

  6. Top with a few tomato slices, then place the egg and cheese on top and sprinkle with a little basil, salt and pepper

  7. Fold the tortilla in half and enjoy!
