Warm some feta crumbles in a small frying pan until it begins to melt
Drizzle the feta with some basil pesto
Fry an egg directly on top of the feta to create a lacy, crispy, cheesy crust, covering to finish cooking the whites
Warm a tortilla in a dry pan
Smash a half of an avocado onto the tortilla and top with a squeeze of lemon
Top with a few tomato slices, then place the egg and cheese on top and sprinkle with a little basil, salt and pepper
Fold the tortilla in half and enjoy!
