Yemeni Lahsa
  1. Chop the onion, tomatoes, and chilies

  2. Saute the onion in olive oil until it starts to brown

  3. Add the tomatoes and season with salt, pepper, cumin, coriander, paprika, and tomato puree

  4. Add the chilies and cook the tomatoes on medium-low heat until dissolved

  5. Switch off the heat and crack the eggs into the mixture

  6. Mix thoroughly and add a splash of water

  7. Turn the heat back on low and spread liquid cheese on top

  8. Cover and let it cook for 3-5 minutes

  9. Garnish with green herbs

  10. Serve with bread and enjoy
