Wash and dice peaches. Set aside.
Mix flour and baking soda in a large bowl. Then add in Greek yogurt, eggs, butter, vanilla and lemon juice & zest. Mix until well combined, but without over mixing. if using cottage cheese, blend first
Gently fold the peaches into the batter.
Add a little less than ¼ cup batter into a buttered & low heated skillet. Flip when bottom is browned and bubbles are forming in batter (because they are thicker than normal pancakes, i cook mine for roughly 3-4 minutes). Once flipped, gently press down, just a little & cook for an additional 3-4 minutes, or until fully cooked. Adjust heat accordingly.
For the glaze, mix together powdered sugar and milk.
