Baked Chickpeas With Tomatoes And Feta
  1. Preheat the oven to 450°F.

  2. In a baking dish, add the cherry tomatoes, chickpeas, garlic, virgin olive oil, salt, oregano, pepper, honey, and lemon peel. Mix well to evenly coat everything.

  3. Roast for 25 minutes, until the tomatoes begin to burst and everything is hot and bubbling.

  4. Remove the dish from the oven. Nestle the feta blocks among the tomatoes and chickpeas.

  5. Return to the oven and bake for another 10–15 minutes, until the feta is warmed through and soft.

  6. Place under the broiler for 2–4 minutes, watching closely, until the top is lightly browned.

  7. Top with fresh oregano and hot honey, then serve with toast (or baguette).
