Add water, honey or sugar, thyme or rosemary, cinnamon stick, cloves, and sliced ginger to a saucepan over medium heat
Stir occasionally and simmer for about ten minutes without letting it boil
Remove the pan from heat and let the syrup steep until completely cooled
Strain the syrup and pour into a syrup bottle
Store the spiced syrup in the fridge for 2-3 weeks
Combine pear juice, vodka or gin, spiced autumn simple syrup, and lemon juice in travel safe bottles
Add the chilled Prosecco to the bottles
Shake or stir before serving
