  1. Heat 2 tbsp oil in a medium saucepan over medium heat.

  2. Sauté garlic, ginger, and lemongrass for 1–2 minutes until fragrant.

  3. Stir in curry paste and miso paste, cooking for 1 minute to bloom the spices.

  4. Add coconut milk, chicken broth, fish sauce, hot sauce, sugar, and kaffir lime leaves.

  5. Bring to a gentle simmer and taste — adjust seasoning if needed.

  6. Heat 1 tbsp oil in a skillet over medium-high heat.

  7. Add garlic, shallot and ginger, sauté 30 seconds until fragrant.
