  1. Heat up a skillet or frying pan on medium-high heat.

  2. Add a tiny bit of neutral oil to prevent sticking.

  3. Make three small piles of mortadella by folding and clumping 2-3 pieces on top of each other.

  4. Add mortadella piles to the pan and cook until browned and crispy.

  5. Flip the mortadella piles and add a slice or two of provolone cheese to each pile.

  6. When the other side of the mortadella is browned, stack the piles one on top of another.

  7. Slice the bun in half and toast each side in the remaining grease in the skillet until golden brown.

  8. Spread mayonnaise on one bun half, and Dijon mustard on the other.

  9. Assemble the sandwich and enjoy.
