Preheat the oven to 400°F (200°C).
In a small mixing bowl, combine the olive oil, salt, black pepper, paprika, cayenne, cumin, honey and vinegar.
In a large bowl, mix together the cauliflower florets, tofu cubes, sweet potato and red onion. Add the spice mixture and toss until everything is coated.
Spread the mixture out evenly onto a large baking sheet. Bake in the oven for 20 minutes, then remove and flip everything over.
Return the sheet pan to the oven and bake for an additional 10-15 minutes, or until the sweet potatoes are tender and the tofu is slightly crispy.
