Line a baking sheet with wax or parchment paper and set aside.
Prep the fruit by washing and drying thoroughly using a tea towel.
Place the fruit in a bowl and toss with some lemon juice.
In another bowl, whisk together the sugar and citric acid.
Add the fruit into the sugar mixture and toss until all of the fruit is coated.
Transfer the fruit to the baking sheet and freeze for a minimum of 3 hours.
