Melt the lard in a non-stick pan and sauté the onion for a couple of minutes with a pinch of salt
Add the potatoes and cook while stirring and moving them around for about 7-8 minutes
Add the cheese and allow it to melt
Turn the heat to medium-low and allow a crust to form at the bottom
Flip and get the crust on the other side too
Let it completely cool down
Cut and eat
