Season the chicken thighs on both sides with your favorite seasonings. I use onion powder, garlic powder, paprika, and Goya adobo seasoning.
Dice all the veggies and mince the garlic.
Sear the chicken thighs for about four minutes on each side or until they develop a nice golden crust. Remove them from the pan.
Add in the veggies, minced garlic and butter. Sauté for a few minutes (until fragrant) and add in the rice.
Saute the rice and veggies together for a few minutes and add in the chicken broth. Season with chicken bouillon seasoning. Taste and see if you want to add any salt.
Place the chicken right on top of the rice and cover it with a lid for about 20 minutes on medium low heat.
Once done, leave the lid on until it's time to serve (about 5-10 minutes will be fine).
Garnish with cilantro.
