Sticky Pineapple Chicken With Coconut Rice
  1. Season chicken with salt, paprika, garlic powder, and cayenne. Sear in olive oil until browned.

  2. For the sauce, add pineapple juice, orange juice, soy sauce, brown sugar, honey, garlic, and chili flakes to the pan. Simmer, then stir in cornstarch slurry until thick and glossy. Add chicken back in and coat in the sauce.

  3. For the pineapple, caramelize pineapple in butter and brown sugar. Add rum and flambé carefully if desired — optional, but adds extra caramelization and flavor.

  4. Cook coconut rice by simmering rice, coconut milk, water, salt, and sugar until fluffy.

  5. Serve chicken over coconut rice and top with pineapple and cilantro.
