White Bean And Orzo Salad
  1. Preheat oven to 400

  2. On a sheet pan place cauliflower, radishes, bell peppers and tomatoes, spray with oil, season with salt and pepper and bake for 20 minutes turning once halfway

  3. Cook orzo according to package and set aside

  4. Chop other ingredients: cucumbers, tomatoes, herbs and put in a large bowl

  5. Make dressing by combining oil, vinegar, pure maple, salt and the roasted tomatoes and bell peppers from roasting step.

  6. Chop the extra peppers and add to the salad bowl along with the orzo, roasted cauliflower, beans and radishes and the dressing. Mix well.

  7. Cool completely before covering tightly and storing in the refrigerator. Enjoy for up to 4 days for best quality
