Preheat oven to 400 degrees F.
Prepare a baking sheet with non-stick spray or greased with a flat layer.
In a bowl, add halved red potatoes.
Add olive oil, minced garlic, dried thyme, dried oregano, dried basil, and Parmesan cheese to the bowl.
Season with salt and freshly ground black pepper.
Mix all ingredients until potatoes are coated.
Place the potatoes in an even layer on the prepared baking sheet with the peel side up.
Bake in the oven for about 25-30 minutes, flipping halfway through until potatoes are slightly crunchy and browned.
Melt the butter either on the stove or in the microwave for about 1 minute.
Sprinkle the roasted potatoes with chopped parsley leaves before serving.
