Preheat oven to 375°.
Lightly grease a 9x13 baking dish.
Pat chicken thighs dry with paper towels.
Lay chicken in a single layer in the dish.
Sprinkle thyme, salt, and pepper directly over the chicken.
Spread the french onion dip over the chicken like frosting.
Scatter green beans around and between the chicken.
Top everything with shredded gruyère.
Bake uncovered for 35–45 minutes, until chicken reaches 165° internally.
Remove from oven and sprinkle crushed potato chips + french fried onions over the top.
Return to oven for 8–10 minutes, until golden and crispy.
Let rest 10–15 minutes before serving so it thickens.
