Pickled Beetroot & Onion
  1. Boil your beetroots until tender then peel and slice into rings or wedges.

  2. Finely slice your onion, then layer all into your jar.

  3. Place the vinegars, water, sugar, salt and spices into a saucepan.

  4. Bring to a simmer till the sugar has dissolved then pour over your beets and onion - poke a Bay leaf down the side.

  5. Make sure they’re all covered with the brine and put the lid on tightly, Upturn the jar a couple of times and then pop in the fridge for at least a few days then enjoy with anything you like.
