Brownie Batter Cottage Cheese Truffles (high Protein, Low Sugar)
  1. Add cottage cheese, nut butter, maple syrup, and vanilla to a food processor or blender and blend until smooth.

  2. Add in almond flour and cocoa powder, blend again.

  3. Set in the freezer for 20min to firm (so the batter is easier to work with).

  4. Roll into balls and place on a parchment paper lined plate or tray. (If the batter is too sticky, lightly wet hands with water and roll into balls.)

  5. Set back in the freezer for another 20min.

  6. Melt chocolate chips and coconut oil in the microwave in 30 second intervals, stirring between each, until fully melted. (Or over the stovetop using the double boil method).

  7. Dip each ball into the melted chocolate, set back on the tray, and top with flakey sea salt.

  8. Freeze until chocolate is hardened, about 15min, and enjoy!
