Rinse split red lentils and soak in water for 15 minutes.
Cook diced shallot in oil over medium-high heat until soft.
Add minced garlic, salt, and red pepper flakes; cook for another 2 minutes.
Add tomato paste and cook, stirring constantly for 3 minutes until beginning to darken.
Pour in vodka to deglaze the pan and cook for another 3 minutes.
Turn heat down to medium, add coconut milk, drained red lentils, and nutritional yeast to taste.
Simmer for a few minutes until the sauce thickens.
Add 1 cup of water if you want the sauce to be thinner.
Garnish with fresh parsley and serve with toasted bread.
