Break the dark chocolate into small pieces and place into a heatproof bowl over simmering water, or in the microwave. Stir the mixture until smooth.
Add the silken tofu, melted dark chocolate and cocoa powder to a blender or food processor, blending until smooth and creamy.
If you prefer a sweeter taste, you can add maple syrup at this stage and blend again.
Transfer the pudding to serving bowls and drizzle with extra virgin olive oil, a sprinkle of flaky sea salt.
Add your choice of toppings such as chopped nuts, frozen berries or an extra grating of dark chocolate.
Indulge immediately or refrigerate for a firmer texture before serving.
