Baked Chicken Ricotta Meatballs With Creamy Spinach Orzo
  1. Preheat oven to 400°F. Line baking sheet with parchment and spray with oil.

  2. Mix chicken, egg, ricotta, salt, Italian seasoning, garlic powder, basil, panko, and cheese. Don’t overmix.

  3. Form into 16-18 meatballs using a cookie scoop. Arrange on baking sheet.

  4. Spray meatballs with oil. Bake 20-22 minutes until golden and 165°F internally.

  5. Heat olive oil over medium. Add garlic and red pepper flakes. Cook 30 seconds.

  6. Add orzo, toast 1-2 minutes until golden and nutty.

  7. Pour in broth, simmer 8-10 minutes, stirring frequently until orzo is tender.

  8. Add spinach until wilted. Stir in cream, both cheeses, lemon juice, and zest.

  9. Season with salt and pepper. Nestle meatballs into orzo and serve immediately.
