Mexican Rice
  1. Heat oil in a medium saucepan.

  2. Over medium heat add rice and toast until just golden brown.

  3. Carefully add in chicken broth, tomato sauce, garlic powder, and cumin.

  4. Bring to a boil then reduce heat and cover.

  5. Allow to simmer for 25-35 minutes until liquid is absorbed.

  6. Remove from heat and fluff with a fork.

  7. Mix in diced cilantro and lime juice.

  8. Fluff again then serve.
