In a medium bowl, combine the melted coconut oil, peanut butter, cocoa powder, erythritol, vanilla extract, and salt. Stir until smooth and well combined.
Pour the mixture into silicone molds or mini muffin cups. If desired, sprinkle chopped nuts or sugar-free chocolate chips on top.
Place the molds in the freezer for about 30 minutes, or until the fat bombs are solid.
Once solid, pop the fat bombs out of the molds and store them in an airtight container in the freezer. Enjoy as a quick snack or dessert!
