Flourless Blueberry Muffins
  1. Preheat oven to 180° C. Grease muffin pan.

  2. Mash the bananas in a bowl. Add the peanut butter, bicarbonate of soda and eggs and whisk until smooth. Fold in the blueberries by hand.

  3. Pour mixture into muffin tin. Bake for 25 minutes.

  4. Store in an airtight container for 3 days.
