Rhubarb Muffins

    For Streusel topping:

  1. Preheat oven to 220° and line a muffin pan.

  2. streusel: combine ingredients and rub together until crumbly.

  3. Whisk together oil, sugar, eggs, milk, and vanilla extract.

  4. Next, whisk in the baking powder, baking soda and salt, making sure to mix well to get it evenly incorporated.

  5. Whisk in the flour, and then gently fold in the chopped rhubarb.

  6. Divide the batter evenly between 18 muffin cups, and sprinkle streusel evenly over the top of the muffins. (Use ¼ cup measuring spoon/

  7. Bake at 220° for 5 minutes, 180° for 25 minutes,

  8. Serve warm with butter!
