Spread Greek yogurt on a sheet pan lined with parchment paper to create an even layer.
Sprinkle passion fruit, mango, hibiscus flowers, coconut flakes and lime zest over yogurt.
Transfer sheet tray to a freezer for at least 2 hours or overnight, until yogurt is frozen solid.
To serve, remove yogurt bark from freezer and break into pieces. If desired, top each piece with a drizzle of honey. Serve immediately.
