Basque Cheesecake
  1. Soften the cream cheese in the air conditioned apartment for about an hour.

  2. Add the sugar and cream together until smooth.

  3. In a separate bowl, whisk together the 5 eggs.

  4. Slowly add the egg mixture to the cream cheese mixture.

  5. Add the heavy cream, salt, and vanilla extract.

  6. Line a 7-inch cake pan with parchment paper, trimming the excess.

  7. Pour the batter into the prepared pan.

  8. Place the pan on a baking tray lined with a wire rack.

  9. Bake at 475°F convection for 50 minutes, until the top is dark brown and the center is jiggly.
