  1. Cook rigatoni for ~80% of time shown on box

  2. Save ~2 cups of starchy pasta water

  3. Combine blended cottage cheese, parmigiano reggiano, ⅓ fat cream cheese, fat free milk, salt & pepper to taste for blended alfredo sauce

  4. Combine paprika, onion powder, garlic powder, ground black pepper, dried oregano, dried thyme, cayenne for homemade blackening seasoning

  5. Season chicken breast with salt and blackening or Cajun seasoning

  6. Add olive oil and butter to pan

  7. Add chicken to pan

  8. Add diced sweet onions, diced bell peppers, minced garlic, butter, and dijon mustard to pan

  9. Add mozzarella and chives for garnish
