Boil the potatoes for 15 minutes or until fork tender.
Dry the potatoes and smash them with a fork.
Add the butter, sour cream, garlic powder, black pepper, parsley flakes, Southern seasoning, Parmesan cheese, and smoked mozzarella cheese.
Mash everything together and put the mixture into a Ziploc bag, smoothing it out.
Freeze the bag for a minimum of 2 hours.
Cut the frozen mixture into fries and toss them in seasoned corn starch.
Fry the fries in an air fryer at 350°F.
