To make the potato filling, cook the potatoes in salted boiling water until fork tender. Drain potatoes.
Add the potatoes to a pot and mash with a fork. Add the cheese, cumin, oregano, pickles, garlic power and salt and pepper.
To make the flautas, preheat the oven to 425°F and pour the oil onto a sheet
Place ¼ cup of the potato filling in the center of each tortilla, then roll, and secure with a toothpick.
Heat oil in a shallow pan and fry for 3 mins on each side.
Serve the flautas warm topped with salsa, cheese, and sour cream.
