Preheat the oven to 400F. Cut bread into cubes and toss on a parchment paper lined sheet pan with 2 tbsp olive oil, ½ tsp garlic powder, 1 tsp salt and ½ tsp pepper. Bake for about 10-12 minutes or until golden. Remove from the oven and set aside.
To make the salad, on a large serving platter or in a large bowl, assemble the peaches, tomatoes, cucumber, feta cheese, onion, green olives and toasted bread. Drizzle with 4 tbsp olive oil, juice from one lemon and 1 tsp salt and toss to combine.
Let sit for 10 minutes before serving. Taste and adjust seasonings if desired with more lemon juice.
