Chicken Souvlaki {with An Easy Marinade!}
  1. If you're using bamboo skewers, soak in water for an hour to avoid burning.

  2. Prepare the marinade by whisking the oil, lemon, and seasonings together.

  3. Add the chicken to a bowl and pour the marinade over.

  4. Cover and chill in the fridge for at least one hour, or overnight.

  5. After the chicken has marinated, skewer the chicken breast on the skewers and set aside.

  6. Prepare the grill top (either using an outdoor grill or a stove top cast iron grill pan) by heating it on medium-high and brushing with oil.

  7. Add the skewers to the grill and grill for 2-3 minutes on each side.

  8. Rotate until the chicken is fully grilled and the internal temperature reads 165 F.

  9. Transfer to a plate and allow to rest.

  10. Serve as a pita wrap with a gluten-free pita and tzatziki if desired, or serve on a plate with rice or cauliflower rice and fresh vegetables like cucumber and red onion.
