Season Shrimp: Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
Heat Oil: In a large skillet, heat the vegetable oil over medium-high heat.

Add Sauce Ingredients: Stir in the sweet chili sauce, soy sauce, honey, lime juice, and grated ginger. Cook for 1-2 minutes until the sauce is heated through and slightly thickened.
Combine: Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional 1-2 minutes until the shrimp are well coated and heated through.
Garnish: Remove from heat and garnish with chopped cilantro.
Serve: Serve the Sweet Chili Garlic Shrimp with lime wedges on the side and alongside your favorite sides, such as steamed rice, noodles, or a fresh salad.
