Fill a suitably sized pot or tub halfway with warm water, maintaining a temperature between 120º to 140º F.
Place the jars in the pot and add hot water until it reaches a level 1 inch above the jars.
Set the immersion circulator to 180˚F and wait for the water to reach that temperature.
Once the desired temperature is achieved, start a timer for 30 minutes.
Keep the water temperature at 180º for the entire 30 minutes.
After 30 minutes, carefully remove the jars and let them sit undisturbed overnight.
Once the jars are completely cool, take off the rings and check the seals.
The jars of pickles can be stored for up to a year.
